Machine harvesting only the tender second flush (second machine harvest of the year) buds and leaves of late May, around Soman (the full grain season), the farmers then steam heat the buds and leaves to prevent any oxidation, thereby maintaining the delicate green color and subtle flavors and scents of the finest second flush tea. Jaksul refers to the shape of the iconic ‘bud and two leaves’ found at the tip of spring growth on the camellia sinensus bush.
